Power up your day like a superhero !These delicious, moist muffins are loaded with fibre to support gut and heart health, making them the perfect match for Everee #3. With the added goodness of dried fruit, they also provide an iron boost to help sustain energy levels. While the recipe does require soaking the bran and dried fruit, as well as resting the muffin mix, the extra step ensures soft, tender muffins which are well worth the wait. 

Ingredients

  • 2 cups bran flakes (baking bran)
  • ½ cup boiling water (125ml)
  • ¾ cup plain flour 
  • ½ cup spelt or wholegrain flour 
  • ½ cup Everee #3 
  • ¼ cup flavourless oil
  • 1 cup Greek yoghurt (plain unsweetened)
  • 2 Tbsp maple syrup or honey 
  • ¼ cup coconut or brown sugar 
  • 1 tsp baking soda 
  • ¾ cup dried fruit – sultana’s, chopped date or prunes (softened in hot water for 5 minutes).
  • 1 ripe banana, mashed
  • ½ cup mixed sunflower and pumpkin seeds

Instructions:

  1. Preheat oven to 170c fan bake. 

  1. Place bran in a large mixing bowl and pour over boiling water and stir till combined, leave for 15 minutes or till cooled.

  1. Mix the flours into the cooled bran mixture and prepare the wet ingredients by making a well.

  1. In a separate bowl combine oil, Everee #3, yoghurt, maple syrup, coconut sugar and baking soda and whisk or blitz till smooth. Add in the drained dried fruit and mashed banana.

  1. Mix till just combined (over mixing will make your muffins tough) and leave for 15 minutes.

  1. Spoon the mixture into medium, lined or greased muffin tins to ¾ full.

  1. Sprinkle the seeds over the muffins.

  1. Bake for 20 minutes or until cooked through. Remove from oven and cool before tipping out of tins.

  1. Enjoy as they are, with nut butter or spread of your choice. 

  1. Two muffins will give you your daily dose of Everee #3. 

These muffins freeze well and make for an easy grab and go breakfast or snack.
