Festive Fudge Balls

These indulgent snacks are a powerhouse of nutrition and flavour. Packed with high-quality protein from black beans and Everee, they’re perfectly balanced with dark chocolate, and a hint of vanilla. Naturally sweetened with dates, these bliss balls deliver dietary fibre for gut health and a boost of plant-based iron. Fudgy, decadent, and irresistibly delicious, they’ll win over even the fussiest food critics!

Ingredients

  • 1 cup pitted dates (soaked in boiling water for 10 minutes)
  • 1 can rinsed and well drained black beans
  • 2 ½ heaped Tbsp’s almond butter
  • ¼ cup cocoa powder
  • ¼ maple syrup
  • 1 tsp vanilla
  • ½ cup oat flour (blitz oats in food processor to a fine consistency)
  • ½ cup dark chocolate chips or chopped dark chocolate
  • 75g ground almonds (3/4 cup)
  • 10 scoops Everee of your choice
  • Desiccated coconut (1-2 cups) for rolling

Instructions

  1. Drain the dates thoroughly and add them to a food processor along with all other ingredients. Blitz until the mixture is smooth and well combined.
  2. Transfer the mixture to a bowl and refrigerate for 1 hour (or freeze for 20 minutes) to firm up.
  3. Remove from the fridge/freezer and roll the mixture into balls using wet hands to prevent sticking.
  4. Coat the balls by rolling them in a shallow dish of desiccated coconut until evenly covered.
  5. Store in an airtight container in the fridge for up to 14 days or freeze in a zip-lock bag for up to 2 months (if they last that long!).

*These balls are soft and fudgy, you can make the texture firmer with the addition an extra ½ cup of coconut, almond meal or extra oat flour.
