
Peanut Butter Brownie Bliss Balls

These delicious snacks are high fibre from the addition of psyllium husk and dried fruit. Cocoa and cacao nibs are rich in polyphenols which are great for gut health. You can find psyllium husk and cacao nibs in your supermarket baking and health food section. You can make these with any Everee product but for the ultimate gut health boost we recommend Everee #3.
Makes: 25 balls | Time: 1 hour 30 mins (includes 1 hour chilling time)
Ingredients:

300g pitted dates (2 & 1/3 cups)

70g peanut butter or nut butter of your choice (just under ½ cup)

75g ground almonds (3/4 cup)

55 g Everee (3/4 cup)

80g sultanas or dried cranberries (2/3 cup).

50g cacao nibs (1/2 cup)

45 g psyllium husk (1/3 cup)

30g cocoa powder (1/4 cup)

Dark chocolate (250g) for dipping or desiccated coconut (1-2 cups) for rolling
Instructions:

Place dates in a small bowl and pour over boiling water. Leave to soften for ten minutes then drain.

Add all ingredients into the bowl of a food processor and blitz till well combined.

Scrape into a bowl and place in fridge to firm up for 1 hour (freezer- 20 minutes).

Remove from freezer and roll into balls using wet hands.

If using coconut, place balls into a shallow dish/tray of coconut and roll to evenly coat.

If using dark chocolate, chop and place in a heatproof bowl, microwave in 30 second bursts till just melted. Use a toothpick to dip each ball into melted chocolate.

Place balls on a baking tray lined with baking paper and leave till chocolate is set.

Store in the fridge for up to 14 days in a sealed container or alternatively place in a zip log bag in the freezer for 2 months (if they last that long!).
Additional Notes: Psyllium husk is rich in soluble fibre, which can aid digestion and help maintain healthy bowel function. It’s often used in recipes like this for added texture and fibre content.
*These balls are high fibre, so we recommend consuming no more than 2 per day for digestive comfort!
