Kickstart your day with a vibrant, nourishing vegetable breakfast. The star of the dish is our Green Goodness sauce, packed with the bone-supporting benefits of tahini (sesame paste) and Greek yogurt, making it the perfect complement to Everee #2. Elevate your meal with protein rich eggs, hearty whole grains, fresh greens, and wholesome fats, creating a balanced meal to fuel your morning. Customise it to your taste by swapping eggs for halloumi or protein packed pulses like chickpeas and mix up the veggies to keep it seasonal.

Ingredients: Green Goodness Sauce

  • 3 tbsp unsweetened Greek yoghurt

  • 1 tbsp hulled tahini (sesame seed paste)

  • Juice of . lemon (1 tbsp) 1 small clove of garlic

  • 1 large ripe avocado

  • 2 scoops (4 tsp) Everee #2 - Balance Support

  • A small handful of green herbs such as parsley, basil, coriander or dill

Ingredients: Breakfast Bowls

  • Olive oil to cook with
  • 4 eggs
  • 3 handfuls of greens such as

    spinach, kale, silverbeet, rocket, mizuna

  • 1 cup roasted almonds, chopped

  • Salt and pepper

  • 1 cup cooked grain (quinoa, brown rice, bulghur wheat) or 2 wholemeal pita breads, toasted

Instructions:

Step 1

Add all green goodness sauce ingredients to a food processor or blender. Blitz with 1 tablespoon of water until smooth. If the consistency is too thick, add a little more water to make it spreadable. Taste and season with salt, pepper and more lemon juice if desired.

Step 2

Heat oil in a medium frying pan and gently sauté the greens. Keep warm on low heat.

Step 3

Poach the eggs and heat the grain or toast the pita bread.

Step 4

To assemble, spread the green goodness sauce onto two plates or shallow bowls. Sprinkle over the grain, if using, followed by the sautéed greens, eggs, almonds, and any extra toppings such as fresh herbs or sauerkraut. If serving with wholegrain pita, place it alongside the bowls for dipping and mopping up the remaining sauce. The green goodness sauce can be made in advance and stored in a sealed container in the fridge for up to two days.

Notes:

Tahini paste is made from sesame seeds and is an excellent source of plant-based calcium. It is traditionally used in Middle Eastern cookery to flavour cooked dishes and dips such as Hummus. You can find tahini near the nut spreads or the health section of supermarkets.
